I made these cookies today from Tanner’s elementary school cookbook. They are tasty and super easy! And… it’s snowing today.
Lemon Snowflake Cookies
1 box Lemon Cake Mix
2 Cups Cool Whip (thawed)
Preheat oven to 350. Place parchment paper on cookie sheet. Mix Lemon cake mix, cool whip and egg in a bowl. It will be really thick and dense (not runny like cake batter). Form into balls and roll the balls in powdered sugar. Place balls on parchment paper on cookie sheet. Bake for 10 minutes. Remove from cookie sheet and place on cooling rack. They are really good with a glass of cold milk and the cookies still just a little warm from the oven.
Sorry… no Thanksgiving photos of the monstrous meal I prepared. By the time I got it on the table nobody wanted to wait for me to take photos and frankly… I forgot. I was hungry.
As for my Mother Of The Year status… the cookies only rated 50% since only one kid would eat them. Tanner likes everything… how can he not like lemon snowflake cookies baked by mom?
YTD MOTY Score: 50% – My goal is to make at least 90% by Dec 31, 2008 and start 2009 with a fresh start. If I can get my MOTY score up to 90 by the end of the year with all the holiday hustle & bustle I think I might just be able to keep in good standing through the month of January.
